I learned this recipe from Hilal, a beautiful Turkish woman and dear friend to my older sister. These potato boats are a straightforward, delicious appetizer.
Ingredients:
2 medium potatoes, peeled and boiled until fork tender
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper
1/2 tsp dried parsley
1/2 cup shredded mozzarella cheese
1 package puff pastry
Directions:
Mix cooked potatoes, spices and cheese. It should look like mashed potatoes. Cut puff pastry into 3 strips, and then cut each strip into four rectangles and fill with 1-2 tsp potato filling. Pinch pastry ends together to make boats. Bake according to pastry instructions.
Note: Because I have a weakness for potatoes, I used far more filling than Hilal. To make boats like Hilal’s, use two packages of puff pastry and one tsp of filling per boat.
